Research forms the foundation of the work carried out by the DIL (German Institute of Food Technology e.V.). As an applied research institute, we develop scientifically sound solutions to current and future challenges facing the food industry. Our research activities combine expertise in food technology, biochemistry, and analytics with engineering know-how and digital methods. We focus on innovative processes, products, and technologies that sustainably improve the quality, safety, and nutritional value of food.
The focus is on innovative processes, products, and technologies that sustainably improve the quality, safety, and nutritional value of food. In doing so, we examine complex interrelationships along the entire value chain—from raw materials and ingredients through processing and structure to functionality and nutritional effects in food. Modern analytical methods and experimental research enable us to specifically understand, optimize, and further develop these processes.

Our research is conducted in close collaboration with industry partners, universities, and public funding agencies. In this way, we ensure that scientific findings are put to practical use and that new technologies are successfully implemented. With interdisciplinary teams and excellent infrastructure, we actively contribute to shaping sustainable food and nutrition systems for the future.
As an international research institution, the DIL funds a significant portion of its work through grants from the European Union, the federal government, and the state of Lower Saxony. The total amount of research funding for the DIL for the period from 2020 to 2029 is approximately 18.6 million.
