The goal of the project is to extract high-quality protein and fiber fractions from narrow-leaved bitter lupine (Lupinus angustifolius L.) for human consumption. Previous studies have shown that membrane filtration is a suitable process for removing bitterness from lupins. This process will now be optimized as part of the planned project, and the throughput will be increased to a commercially viable level. High-moisture extrudates (HME) will be produced from the protein fraction and the fibers and subsequently developed into meat substitute products.
To meet the growing demand for plant-based foods, new sources of protein are being developed. Lupins are a promising alternative to soy, lentils, or chickpeas: They provide 30–40% protein, about 30% dietary fiber, are low in fat, low in starch, and gluten-free. Building on the LUPROME project, a technology developed on a pilot scale is being used to extract largely native, functional protein and fiber fractions from narrow-leaved bitter lupine and to gradually scale up the throughput to commercial levels. At the same time, by-products such as hulls, germ oil, and alkaloid and oligosaccharide fractions are processed to create additional value. Cellulose-containing fibers produced via membrane technology are refined to food-grade standards and, together with the protein fraction, processed via high-moisture extrusion into textured products, which are further developed into meat substitute products. Initial samples have been produced and are currently being characterized; the goal is to develop a prototype with appealing sensory properties.
