Ensuring a humane supply of high-quality nutrients (e.g., proteins) represents a current and future challenge for the food production and processing industry. Similarly, foods derived from alternative protein sources (e.g., insects or algae) are often not widely accepted. To address these challenges (particularly in the Mediterranean region), the ProxIMed project was launched.
ProxIMed is investigating the production of alternative protein sources on land and in water, such as those derived from insects, fungi, algae, or duckweed. A key focus is on consumer acceptance in the Mediterranean region, including cultural and religious barriers, as well as on education and awareness campaigns promoting conscious, healthy eating. In addition, innovative technologies for protein extraction and purification are being evaluated, including microwave vacuum drying, ultrasound, supercritical fluids, cold plasma, triboelectrostatic separation, microfluidization, and ultrafiltration. Based on these proteins, safe, shelf-stable food and feed formulations are being developed that are appealing to the senses and meet national quality and safety standards. Concurrently, bioavailability, antinutritional factors, and allergenic potential are assessed. A life cycle assessment and socioeconomic analyses evaluate the climate and water footprints as well as market opportunities; in addition, marketing strategies and business models are developed for SMEs to facilitate commercialization.
